Watermelon Basil Cooler

Oh boy – it’s been HOT in Missouri this week and I’m ready for a cocktail. This Watermelon Basil Cooler is the perfect way to beat the heat. I love sipping’ one of these poolside (or when I’m lounging on my couch tbh). Plus, I am so pumped to make these all summer because I’m growing my own basil. Just call me a crazy, plant lady – I’m down with it.

 

For me, nothing says summer like watermelon so I always have it on hand. That also is probably why I’m usually sipping on these.

 

Yield: About 4-5 drinks

 

Ingredients:

  • 3 cups watermelon
  • 1 bottle of white wine
  • 1 1/2 cups lemon-lime soda
  • 1/4 cup basil
  • Grenadine if desired

 

  1. First, use a food processor or blender to puree the watermelon. Reserve some pieces to float and use as garnish. Once the fruit is pureed, squeeze it through a cheesecloth or strainer to avoid having pulp in your drink.
  2. In a pitcher, add chunks of watermelon and basil. Then pour white wine, watermelon juice, lemon-lime soda, and grenadine (if desired) into pitcher. Stir everything together.
  3. Now you can be like me and immediately pour yourself a drink because you have no self control. Or you can refrigerate the cooler for 2-4 hours and it will taste even better! I like to garnish mine with watermelon chunks, torn basil, and of course, LOTS of ice!
